- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground black pepper
- 1/2 cup plain yogurt
- 1/2 cup sugar
- 1/4 cup vegetable oil
- 1/4 cup water
- 1 teaspoon rose water
- 1/2 teaspoon orange blossom water
- Vegetable oil for deep-frying
- 2 tablespoons sugar for coating
Instructions:
1. In a medium bowl, whisk together the flour, baking powder, baking soda, cardamom, nutmeg, cinnamon, cloves, and black pepper.
2. In a separate bowl, whisk together the yogurt, sugar, oil, water, rose water, and orange blossom water.
3. Add the wet fixings to the dry fixings and blend until recently consolidated.
4. Heat the oil in a deep-fryer or large pot to 350°F (175°C).
5. Drop the batter by the tablespoonful into the hot oil and fry until golden brown, about 2 minutes.
6. Remove the jalebis from the oil and drain on paper towels.
7. Place the jalebis in a bowl and sprinkle with the sugar.
8. Serve warm. Enjoy!
Gulab Jamun

Rasgulla
-1 liter of full-fat milk
-1/4 cup of lemon juice
-1/4 cup of water
-1/2 cup of sugar
-1/4 teaspoon of cardamom powder
-1/4 teaspoon of rose water
Instructions:
1. In a large pot, bring the milk to a boil over medium-high heat.
2. Once the milk has come to a boil, reduce the heat to low and add the lemon juice. Stir the milk continuously until it starts to curdle.
3. Once the milk has curdled, strain the mixture through a cheesecloth or muslin cloth.
4. Gather the edges of the cloth and squeeze out as much liquid as possible.
5. Transfer the cheesecloth with the curdled milk to a bowl and add the water.
6. Knead the mixture for about 10 minutes until it forms a soft dough.
7. Divide the dough into small balls and set aside.
8. In a large pot, bring the sugar and 1/4 cup of water to a boil.
9. Once the sugar has dissolved, add the rasgulla balls and reduce the heat to low.
10. Simmer the rasgullas for about 10 minutes until they are cooked through.
11. Remove the rasgullas from the heat and let them cool.
12. Once cooled, add the cardamom powder and rose water and mix well.
13. Serve the rasgullas chilled or at room temperature. Enjoy!
Ras malai
Ras malai is a popular world dessert made with cottage cheese dumplings soaked in sweetened, thickened milk. The dumplings are made from paneer, which is a type of fresh cheese. The dumplings are cooked in a sugar syrup and then soaked in a thickened, sweetened milk. The milk is flavored with cardamom, saffron, and other spices. - 2 liters of full-fat milk
- 2 tablespoons of lemon juice
- 1/2 cup of sugar
- 2 tablespoons of rose water
- 2 tablespoons of chopped pistachios
- 2 tablespoons of chopped almonds
- 2 tablespoons of raisins
- 2 tablespoons of cardamom powder
Instructions:
1. Heat the milk in an enormous pot over medium intensity
2. When the milk starts to boil, add the lemon juice and stir.
3. The milk will start to curdle and separate into curds and whey.
4. Turn off the heat and strain the curds through a cheesecloth.
5. Gently squeeze the cheesecloth to remove as much whey as possible.
6. Place the curds in a bowl and add the sugar, rose water, pistachios, almonds, raisins, and cardamom powder.
7. Mix everything together until it forms a dough-like consistency.
8. Take small portions of the dough and shape them into round balls.
9. Place the balls in a steamer and steam for 10 minutes.
10. Remove the balls from the steamer and let them cool.
11. Serve the Ras Malai chilled or at room temperature. Enjoy!
